Located at 1903 Post Road — next to Isabelle et Vincent bakery — the shop will be the only 100 percent locally sourced, traditional whole animal butchery in Connecticut serving organic, non-GMO, nitrate-free, fresh and healthy meats, according to owner Jeff Cutshall.
Custom Meats will source all of its beef, pork, lamb and poultry from small farms in Connecticut and New York, most within 75 miles of the store.
Everything will be cut and prepared in house, including dry-aged beef, sausages and prepared foods.
The store will also offer farm-fresh local eggs, raw milk and seasonal vegetables.
Cutshall said he hopes the store will be open for business in mid- to late-April.
